There are several mining missions you can find out in the galaxy.
Mining Contracts:
You can obtain mining contracts from distribution centers in trading station sectors or from Polaris orbital refineries.
Mining contracts ask you to mine a certain number of blocks from resource asteroids in space.
They do not need you to turn in any ore and are essentially free money and reputation.
Mining Sites:
Mining sites can be found in star systems in neutral territory.
You will be tasked with mining a specific type of ore or crystal to help a faction and can be a good source of money and reputation.
Trader Missions:
Some traders will ask for mineable resources.
While not exactly a mining mission, mining can help you obtain these resources.
